Cookies never get old - they’ll forever be a dessert or snack of choice. This year, stray from the traditional candy at the door and give out Halloween cookies as a fabulous Halloween treat. All you have to do is bake or buy basic shortbread cookies. Fabulous icing can be made with just three simple ingredients: egg whites, lemon juice and powdered sugar. Courtesy of Celebrations expert, Amy Berman, here’s an appetizing recipe:
1c. Pasteurized Egg Whites
5c. Sifted Powder Sugar
1 tsp. Lemon Juice
1. In an electric mixer with a fitted whisk attachment, beat the egg whites on medium speed. Continue until soft peaks form.
2. Slowly add the sifted powder sugar to the egg whites on medium speed. Scrape down bowl as needed. Add lemon juice when done.
Tip: For thicker royal icing, don’t be afraid to add more powder sugar.
3. For 5-8 minutes, beat on medium-high speed until mixture thickens and becomes stiff. Scrape down bowl, and cover with plastic to avoid a skin from forming when not using.
4. Add food coloring to your royal icings, and have your colors ready to go before you start decorating.
5. Un-used royal icing can be kept up to 5 days in a fridge in an airtight container.
Tip: Be sure to bring it back to room-temperature before serving.
